Spinach Cheese Slice

You will love this simple nutritious vegetable main course or to accompany meat. 


  • Lots of fresh spinach (I fortunately have in my veg garden at the moment. It is so easy to grow) 
  • 1 onion, finely chopped 
  • 250g feta cheese.  I’m all about local and use Jackals Hill delicious feta.
  • 40g butter, I do love Jackals Hill  farm fresh butter. 
  • 125g cheddar cheese or local mozzarella from Noah’s Cheese.  
  • 5 eggs 
  • 6 sheets filo pastry 
  • Salt and pepper for seasoning 


Wash and dry spinach, cut off white stalks, roll up leaves, shred finely and combine with the chopped onion in a bowl, stand for 1 hour, drain off any excess water (I squeeze out with my hands). 

Add crumbled feta, grated cheddar or mozzarella cheese and seasoning. Combine well. 

Fold each sheet of pastry to form a rough square, cover with greaseproof paper, then a damp cloth. 

Use a 23cm x 28cm greased baking dish and place a piece of the folded pastry into the dish. Brush with melted butter, repeat process with two more folded sheets, brush butter between each sheet. 

Press spinach mixture firmly onto the pastry. Beat eggs until frothy, pour evenly over spinach. Cover with the remaining three sheets of folded pastry, brushing between each layer with melted butter. 

Cut spinach slice into squares before baking. Bake in moderate oven (180 degrees C) for 45 minutes or until light golden brown.

Serve warm or at room temperature.
